"Chocolate Bread" is what I call these chrismtas "cookies".
I know it's not really a cookie, it is more like a brownie, but they have become a part of my christmas cookie line-up!
This recipe was given to me by my aunt about 5 years ago. Her recipe was made with 1/2 cup of flour, which is easy for us to substitute in this recipe with 1/4 cup ground almonds and 1/4 cup potato starch or rice flour.
RECIPE:
6 eggs
1 1/4 cup sugar
1 3/4 cups butter
1/2 lbs. dark chocolate (for cooking)
2 cups ground almonds
1/4 cup ground almonds
1/4 cup potato starch (or rice/tapioca flour)
10 ounzes couverture for chocolate coating
Slowly melt butter and chocolate at a low temperature and cool off.
Mix eggs and sugar until sugar dissolves- add nuts, almonds, flour/starch.
Add the cooled chocolate butter to the rest.
Use a brownie pan, if you have one, and lay out some baking paper.
Fill pan with (about 1/2 inch deep) of batter.
Bake at 350° for about 25-30 minutes.
Let it cool off for at least 45minutes!
Heat couverture (gluten free chocolate bars can also be used) in a water bath or microwave and spread it on top.
