Vegan German Potato Salad

Ingredients

1 bunch fresh dill, minced
1 apple, finely chopped
1 green onion, chopped
1/2 cup carrots, finely chopped
3 tablespoons Dijon mustard
3 tablespoons olive oil
1 tablespoon maple syrup
1/2 tablespoon apple cider vinegar

Preparation

Cooked new potatoes until just tender. Drain and put it into large bowl large enough for all ingredients.

Cut all herbs and vegetables and add to potatoes.

Grate the zest of the lemon and add to to potatoes, then juice the lemon as the first part of the dressing ingredients in next step.

Whisk together dressing ingredients; adjust sweetness / vinegarness by adjusting quantities of oil, maple syrup, and apple cider vinegar.

Pour dressing over potato mixture and mix to coat evenly and adjust salt and pepper to taste.
