Chocolate Chunk Brownie Muffins

Ingredients

1 tablespoon unsalted butter
2 cups chocolate chunks, divided
1 teaspoon vanilla
1 cup flour
3/4 teaspoon salt
2 teaspoons baking powder

Preparation

1
Preheat oven to 350 degrees.
2
Line 12-cup muffin pan with liners or spray with nonstick cooking spray. Set aside.
3
In a small saucepan, melt together butter and 1 c. chocolate chunks until smooth and creamy. (You could also microwave this in a microwave safe bowl).
4
In a large bowl, combine eggs, brown sugar and vanilla.
5
Blend until well combined.
6
Fold in melted chocolate mixture.
7
Add flour, salt and baking powder, and stir until smooth and creamy.
8
Add remaining cup of chocolate chunks and stir to combine.
9
Pour mixture into prepared muffin cups, by the ¼ cup.
10
Bake 18-20 minutes until the muffins are set and the tops resemble a brownie.
11
A toothpick will come out wet because of the melted chocolate, so just use your finger to make sure the muffins spring back when touched.
12
If they’re not done, they will sink in a little.
13
They should feel a little spongy when finished.
14
Cool slightly on a wire rack and serve.
15
Store extras, if you have any, in an airtight container.
