Grilled Veggie and Salad Wrap
Ingredients
2 mini peppers (any color you want) - sliced
1/4 large onion sliced
2 whole wheat tortilla's
2 slices of provolone cheese (or any white cheese you may like)
2 tablespoons non-fat sour cream
1/4th tablespoon ranch dip mix
4-5 romaine leaves chopped up
1/2 a roman tomato diced

Parent: prep all the ingredients - chop the tomato, chop the romaine lettuce, slice the onion and peppers

(is the kiddo is earlier, you can have them prep some of the veggies and you some)

Parent: Put the pan on the stove top, under medium heat. Spray the pan with non-stick spray.

Kiddo: Place the onions and peppers in the pan and stir for about 5 minutes. Salt and pepper to taste. Not too much salt because the cheese will add some salt.

Kiddo: Bunch up the peppers and onion in the center of the pan, and place the two slices on top of the pepper/onion mix, reduce the heat and let it sit for 3-5 minutes till the cheese melts.

Kiddo: Mix the sour cream with the ranch dip in a small bowl. Place the chopped lettuce and tomatoes into the ranch mixture and mix.

Parent: Heat up two tortillas in a pan on the stove top.

Kiddo: Start assembling the burrito. Place have the grilled veggies with cheese in the center of the burrito, and place half the lettuce/tomato mixture with ranch dressing. Wrap it up and enjoy!

This recipe is my attempt at a remake of a wrap I ate at a sandwich shop a couple of months ago! My take is a little healthier and allows for more creativity!
