Three-Bean Chili

Ingredients

2 pounds ground chuck
1 lrg yellow onion chopped
1 lrg green bell pepper chopped
2 cans diced tomatoes with garlic and
onion - (14 1/2 oz ea) undrained
1 can tomato sauce - (15 oz)
1 can kidney beans - (15 oz) rinsed, drained
1 can black beans - (15 oz) rinsed, drained
1 can black-eyed peas - (15 oz) rinsed, drained
2 envs chili seasoning - (1.6 oz)
2 cups water
teaspoon ground red pepper
1 tablespoon sugar (optional)
Shredded Monterey Jack-colby cheese
Chopped green onions

Preparation

Cook first 3 ingredients in a large Dutch oven over high heat 10 minutes, stirring until beef crumbles and is no longer pink. Drain. Return to pan.

Stir in diced tomatoes, next 7 ingredients, and, if desired, sugar. Cook over medium-high heat 20 minutes. Serve with desired toppings.
