Angel Cake

Ingredients
1 cup cake flour (can substitute 1 c. minus 2 tbsp. sift
1/2 cup granulated or confectioners' sugar
1 1/2 cups egg whites (10 to 12 eggs)
2 1/2 tablespoons cold water
1 1/2 teaspoons cream of tartar
1/4 teaspoon vanilla
1 teaspoon almond extract
1/2 teaspoon salt
1 cup sifted sugar

An electric mixer method: Preheat oven to 350 degrees. Sift, then measure 1 cup cake flour. Add and sift again 6 times: 1/2 cup granulated or confectioners' sugar.
