Get a big bowl, preferably wide and shallow (easier for mashing) and roughly mash the avocados. Add some of the lime juice and salt, and keep tasting and adding more until it is as you like.

Add finely chopped spring onion and plenty of coriander.

This is not a spicy guacamole (hence no chilli) - this one is meant to be mild, creamy and fresh-tasting.
