Feta Chicken Roll-Ups with Mustard Sauce

Ingredients

6 chicken breasts
1 cup crumbled feta
1/3 cup diced, roasted red & green peppers
4 tbsp olive oil
1 cup Dijon mustard
1.1/2 tbsp lemon juice
1/2 tsp dried oregano
Salt and pepper

Preparation

In a small bowl mix mustard, lemon juice, oregano, salt and pepper. Set aside

In another small bowl mix feta cheese, peppers,olive oil. Set aside.

On a clean work surface, lay chicken flat (smooth sides down) and sprinkle with salt and pepper.

Spread cheese mixture over chicken, roll up chicken tightly and seal with a toothpick.

In a large saucepan head 3 tbsp of olive oil and sauté chicken rolls for 5 min. Add the mustard mixture, cover and cook in medium heat for 20 min.

When chicken rolls are ready discard toothpicks, and cut into slices.
