Savory Cheddar & Chive Zucchini Bread

Ingredients

2.5 Cups Flour
2 Cups grated Zucchini (about 1 large zucchini)
3 eggs
1 cup of unflavored greek yogurt
1 Cup Shredded Cheddar
¼ cup reduced fat milk
¼ cup minced chives
4 tsp baking powder
1 tsp salt
½ tsp baking soda
¼ tsp garlic powder

Preparation

Preheat oven to 350 degrees. Lightly grease or cooking spray large bread pan.

In a large bowl mix together eggs, yogurt, milk.

In a medium bowl whisk together all dry ingredients: flour, baking powder, baking soda, garlic powder, and salt.

Slowly add dry mixture to wet mixture stirring as they combine.

Then add grated zucchini, cheddar, and chives to the bowl. Mix until all ingredients are well combined.

Pour bread batter into the greased baking pan.

Bake for 60-70 minutes or until a toothpick comes out clean.

I’m almost always a savory over sweet kind of girl. Give me a bag of potato chips over a box of candy any time. That thinking is what got my wheels spinning on transforming zucchini bread into something with that salty factor. After fussing around with a recipe, I struck gold {cheddar cheese gold that is! }.
