Szechuan Noodles With Peanut Sauce

Ingredients

12 ounces spaghetti, linguine or similar cup hot water
2 teaspoons reduced sodium soy sauce
2 teaspoons vinegar (white wine or rice
2 scallions, finely chopped
2 cloves garlic, very finely minced
1 teaspoon sugar
1/2 - 1 tbsp. hot red pepper flakes

Preparation

Cook pasta until al dente (chewy). Drain and set aside. Keep warm. Prepare sauce in order given. Combine sauce and pasta in a heated serving bowl. Makes 4 servings.
