Pretty Aspen Snowflake Potato Chip Cookies

Crazy! That’s what I thought my friend, Carol, was when she told me she was baking cookies after work and the main ingredient was potato chips.

I was the one that was crazy for doubting her baking skills. These were the easiest, cheapest cookies I’ve ever made, and they are fabulous! They taste a bit like shortbread, probably because of all the fat.

Carol’s advice is to buy the cheapest potato chips you can find, and she says they freeze very well. Perfect for the holiday season.
