Chilli Mash

Ingredients

900 grams potatoes unpeeled
50 grams butter
150 mls hot milk
1 salt and pepper
1 tablespoon mustard seeds
2 tablespoons olive oil
3 finely chopped spring onions
2 seeded and chopped green chillies

Preparation

Cover the potatoes with cold water in a large pan add a good pinch of salt bring to the boil and simmer for about 20 minutes until tender.

Drain well and leave until cool enough to handle.

Fry the mustard seeds in the olive oil.

When they start to pop shake the pan and leave until the popping stops (3 4 minutes).

Add the chopped spring onions and chopped green chillies cook for 23 minutes.

Peel potatoes and return to the pan with butter.

Mash smoothly over gentle heat then gradually add the hot milk and beat until creamy and smooth.

Fork the chilli mix into the mash with tbe juice of a lemon.

Add salt and pepper to taste.

Choose a floury potato golden wonderking edward maris piper or wilja and for the best possible mash cook whole and unpeeled.
