Question: what is a term to describe braised meats that show little resistance to a fork?

Do you mean collagen denaturing or shrinking?
We normally just refer to it as tense.

At home I use the term "Fall Aparty" :-) but I think some more common terms would include:

-Tender
-Fork Tender
-Soft
-Falling apart
-Falling off the bone

I agree with "Fork-tender"
Also, "Slow-braised" would maybe imply that it is so tender it falls apart? :)
