I'm gonna make pizza this weekend, but I ran out of the already made stuff in a jar. So now I have a bunch of canned plain tomato sauce. Does anyone have a to-die-for recipe?
I used canned tomatoes- not a sauce.
Chop 3-4 cloves garlic and saute in about 1 1/2 TBSP olive oil.
When the garlic is starting to brown- add 28oz can of whole tomatoes.
Smash the tomatoes with the back of a spoon. Add 1 tsp crushed red pepper, 1 tsp dried oregano, 1 tsp dried basil, salt & pepper to taste. Cook over medium high to reduce (about 10 minutes).
Do you have tomato paste? Saute some dice onion and minced garlic until they begin to carmalize (turn golden). Pour a couple cans of your tomato sauce into a strainer to get the excess juice out of them (you may have to physically press it into the strainer to get the juice to strain out). Once drained, add the tomato sauce to the onions & garlic in the saute pan. If you have tomato paste...add 3 tablespoons to the mix. Any fresh herbs available like basil, rosemary, parsley or thyme. Mince up what ever you have and add them (2 or 3 tablespoons). If you only have dry spices...add a teaspoon of basil, a teaspoon of oregano, a half teaspoon of thyme and a half teaspoon of fennel seeds. Stir the mix in and let the sauce simmer (NOT BOIL) for 30-45 minutes or so...until it thickens up a bit. Let the sauce cool before you use it on your pizza. If it is still kind of watery...strain it before putting it on your pie.
