Canned pears? In my opinion they are too soft- and being cured in corn syrup, not the true representation of the craft of garden to glass cocktails. Certainly the other ingredients speak to the craft of the cocktail, but with fresh pears available, nearly year round, a canned product is just not used in a good cocktail bar.
For an interesting take on this recipe, grill the pear until the secrets are revealed.
