generally if there is no or minimal trans or saturated fat you are ok. you are on the right track here because the problems with food often occur with the pastry not with the filling. From my point of view why bother with absolute values, this is cooking not particle physics. unless you have a particular nutritional problem or fetish just keep away from the baddies(see above) and eat lots of fresh and green ....
