Question: What else can we do with Avocado apart from mixing it with mayonese ?

I was looknig into different books and thought a while what can be done with Avocado which makes it stand out apart from mayonese and getting it meshed up ? Appreciate your replies and particularly if you are from S.America

You can make a chunky salsa with tomatillos, serrano peppers, garlic and avocados. You can make chilled pureed avocado soup with cucumber. Gazpacho. Avocado corn relish. Crab & avocado sandwich. Avocado ice cream. Avocado pie. Avocado fries.

Make guacamole is my first suggestion. Or, try replacing the fresh mozzarella cheese in a caprese salad. Cut avocado and mango into similar sized cubes, mice some cilantro, toss with fresh lime juice and a little salt (add diced jalapeno peppers if you want heat).

I'm European but we do eat a lot of avocado. Avocado-crab was also the first thing that came to my mind but we eat it as a starter. But if you would like to make something different, then you could try the carrot-coconut soup or if you like to eat raw fish, then definitely try tuna cannelloni. Both the recipes are on my website.

If you got sweet tooth, you can make a variation of your avocado into a delicious and very easy dessert treat. Cut the avocado into half, remove the seed and scrape the flesh. Put it into the bowl. Add cream, powdered milk, sugar, some cashew nuts or almonds then mix it well. Finally refrigerate it for some time. Voila. Instant yummy dessert..

Avocado Soup (hot) is one of my favorite uses. A chilled avocado soup is wonderful too. I will slice and add to a salad or add to the stuffings of a quesadilla. Also, after pureed, it can be the start for a good vinagrette. I have made avocado coulis with sour cream to slather on a spicy grilled hamburger patty topped with Jack cheese. I always keep limes around to squeeze on the avocado to minimize browning.
