First off...'left over pulled pork' is an oxymoron!!! Just reheat it with some of your favorite bbq sauce and it's good to go. Pulled pork sandwich, pulled pork burrito. A popular dish in the south is BBQ Spaghetti. Spaghetti noodles tossed with bbq sauce....add the pulled pork to the mix and grab some napkins.
If you don't have a sauce on it- leftover pork makes a wonderful green chili stew. You can also dice it and add it to wontons or use in an asian style soup or make pork fried rice!

If you don't like spicy food, skip or demembrane the chilies. They do add a nice flavor. Add more oil if it's not enough. Meat should be pretty dark in color when done, keep tasting as you cook so it's not too burnt for your taste. You can also add some salt and pepper to taste.

You can make a charred meat dish. Get rid of as much sauce as possible. You can use a recipe I use for beef:
