Question: Simple dessert shouldn't be so complicated!

February 19, 2011
Many, many years a go I had a favourite dessert that remains to this day the greatest dessert of all time. It’s an exceptionally simple dish by unfortunately I’m just not sure the missing ingredient or exactly how to make it…perhaps you might be able to help? So, there were layers of grapes, peaches and strawberries. Easy so far… I’m fairly sure that over the fruit was a layer of cream, the problem being is I can’t remember what type of cream – I don’t think it was a simple single/double cream. On top was a caramelised sugar. The dish being under the grill for ten minutes actually warmed the whole thing through nicely. So, I think this is correct, I’m just not sure what type of cream I should be adding in there. Any advice you have would be most appreciated.

Oh, and a layer of macaroons under the cream – sorry, it’s all coming back slowly!

I'm guessing it was crème fraiche or creme fresh as American's say it. It's a French cream that is often paired with fruit. It has the consistency of sour cream, but it not as tart.

May have also been mascarpone, but it is thicker. It's often used in tiramisu.

Good Luck!

Most grateful, thank you Cheri.

It really sounds like a creme brulee.
Here is a recipe that isn't a traditional creme brulee- but sounds like close to what you're describing.

Just looked at the recipe that Chris suggested - it sounds wonderfully impressive but at the same time, so simple to do!! (OK for me then LOL)
