I happened to get a pastured pork loin roast from my dairy club and I have not yet cooked this type of cut. I was wondering if anyone had any easy and good recipes. Thanks so much in advance! Alex
You can butterfly cut it, lightly marinade and grill it in a mixture of orange and lime juice, olive oil, chili powder, cumin and just a pinch of cinnamon.
It's really good butterflied and blackened. With either of these, you can thinly slice it and either serve it as the main (meat course) or serve it with tortillas, avocado slices and a sweet & spicy slaw for some great tacos.
I use a lot of oven bags when having "big meats" This is one of my favorite thing to do with pork roasts
Apricot Glazed Pork
1 large oven bag
1 Tbsp flour
1 jar apricot preserves (12-oz jar)
¼ cup apple cider vinegar
1 Tbsp minced garlic
2 tsp rosemary
½ tsp salt
½ tsp pepper
3–4 lb pork roast
1 lb carrots cut into pieces or baby carrots
Place oven bag in a 9x13" pan. Put the roast in the bag, then add the carrots. Mix the remaining ingredients in a bowl and pour over everything. Bake at 325 degrees for 2–2¼ hours.
You can put it in a crock pot with some chicken broth, let it cook all day, then shred it. Then drain it and add some bbq sauce or enchilada sauce and let it cook a little more. You can use the bbq pork for sandwiches, on top of salads, or just by itself. The enchilada version you can use for enchiladas, tacos, Mexican salad, etc. The shredded meat also freezes well.
