Debi- It would really depend on the the zucchini themselves. Water weight can make a big difference in the weight vs the volume of the vegetable. A single zucchini can yield from 1/2 cup to 4 cups! And it would depend on your preparation. If they are diced or cubed, you'll get a different quantity of cups than if you shred them.
A pint (2 cups) is a pound the world around. So, if you have a whole squash that weighs one pound, trim and cut - probably fill a pint measure more or less.
