Question: i'm using a turbo brolier to bake but sometimes my browines or squares come out raw in the middle but the sides are done well why is this?

Try to adjust your temp to 150 degrees C. Safest temp for baking using a turbo broiler.

Turbo broilers are like a convection oven, in that the hot air is blown around the food to give it "even cooking". In the case of your brownies, the heat is being blown around the edges and sides of the pan, causing them to cook faster than the middle. Reducing your temperature and baking a little longer might be your best solution.
