For Enchiladas you will need: green sauce/salsa verde (tomatillo based) OR red sauce (tomato based) tortillas, traditionally corn tortillas are used cheese a meat filling, either sauted ground beef OR sauted shredded chicken OR sauted shredded beef You want to begin by evenly coating the bottom of your baking dish with some of the sauce. Warm up the tortillas so they are more pliable. The easiest way to do this is to take a clean kitchen towel, run it under the tap, and then wring out the excess water. Place all of your tortillas onto the wet towel and wrap them up,then microwave them for about 45 seconds. Now take one tortilla place it on a flat surface, place a vertical strip of filling onto the center of the tortilla. Roll the tortilla to encompass the filling, and place into the baking dish. Continue the process with the remaining tortillas. When the baking dish is full, ladle a generous portion of sauce over the tortillas and sprinkle generously with cheese. Bake in a preheated 350 F oven for about 45 minutes, until the cheese is melted and the edges are just starting to brown. Serve with cilantro and sliced onion.
