Hi, I’m Tom Black from the Gourmondo Catering Company. We are at our Elliot Cafe in downtown Seattle. We’re going to talk about holding your knife. The way I prefer to hold my knife is, I choke up on the handle a little bit. That puts me closer to the blade and gives me more control of the blade. This is how I choke up on my knife and I do it with all my knives. I also have very large hands, so that makes a little more sense. But the typical person will also find their comfort zone. Every knife, as you can see, I hold the same way. I grip at the tail of the handle and part of the blade. That just gives me control of the knife, better control of the blade for doing all the different cuts we need to do.
