Veggie Quinoa Enchiladas

1 cup uncooked quinoa
1 onion, finely chopped

1 red pepper, diced
2-3 roma tomatoes, diced
6 oz. spinach
4 oz. can mild green chiles
15 oz. can black beans, rinsed and drained
1/2 tsp. chili powder
1/2 tsp. cumin
1 tsp. oregano
1 cup salsa
2-3 cups enchilada sauce
1 1/2 cups shredded cheese
8 large tortillas
