I'd start by brining. Dissolve about 1 cup of salt into 1 gallon of water. Place the turkey in the saltwater for 2 hours; keep in the fridge until ready to use.
Rinse off the turkey breast. Then rub them with the following herb mixture.
1/4 cup basil
1/4 cup oregano
1/4 cup garlic powder
1 Tbsp. fresh ground pepper
2 Tbsp. Parmesan cheese
1 Tbsp. Rosemary
2 tsp. thyme
Rub generously with olive oil and let sit in the fridge for another 1 to 2 hours.
To cook, you can grill or bake in the oven.
For the grill, cook 4 - 6 mins on each side or until instant read thermometer reads 165 degrees.
For oven, bake 350 for about 25 - 35 mins or until instant read thermometer reads 165 degrees.
