Pan-Fried Potatoes and Bacon
Ingredients
1 1/2 pounds potatoes
2 tablespoons all-purpose flour
4 green onions, chopped
1/2 cup light cream
4 bacon strips, finely chopped
Preparation

Peel and dice potatoes, boil or steam 5 minutes or until tender; drain, place in bowl, mix in flour, green onion, and cream. Cook bacon in large pan until crisp, pour potato mixture over bacon in pan, cook over medium heat until potato mixture browns underneath. Turn mixture over with a pancake turner, brown on other side, serve immediately.
