Cantonese Chicken

Ingredients
1 cup chopped celery
1 cup cooked julienne carrots
2 tablespoons soy sauce
2 cups pineapple chunks
1 can Chinese fried noodles
1 cup chopped onions
3/4 cup slivered almonds
3 tablespoons butter
1/4 teaspoon salt
4 cups cooked chicken, diced
2 tablespoons cornstarch
2 1/2 cups pineapple juice
2 teaspoons lemon juice
Preparation

Saute celery, onions and almonds in butter; add the salt and chicken.

In a separate pan, combine cornstarch with pineapple juice, soy sauce, and lemon juice, and cook until thickened while constantly stirring.

Just before serving combine sauce and chicken mixture; heat and add carrots and pineapple chunks.

Heat through and serve it over Chinese Noodles.
