Speedy Stroganoff

Ingredients
2 cups diced leftover roast beef - (to 3 cups)
1 can light cream of mushroom soup - (11 oz)
1 env beefy onion soup (dry mix)
1 can or jar sliced mushrooms - (4 oz)
cup cream or half and half - (to ¾ cup)
1 tablespoon sour cream - (to 2 tbspns) if desired
Salt to taste
Freshly-ground black pepper to taste
