Fluffy Baked Potato

Preheat oven at 350 degrees.

Scrub potato thoroughly and use fork tines to prick into the potato.

Put it in the oven and bake for about an hour or until the potato is done.

Cut the potato in half, lengthwise.

Scoop out the insides of the potato with a spoon and mash; return mashed potato to shell.

Beat the Neufchatel cheese lightly; spoon cheese atop potato.
7
Sprinkle tops of potatoes with snipped chives.
