Coconut Cream Pie

Ingredients

1 pie crust, baked
2 boxes vanilla pudding, cooked per instructions for pies
whipped topping or whipped cream
3/4 cup + 3 tablespoons flaked coconut

Preparation

Put 3 tablespoons of coconut in a pie tin and brown slightly; set aside.

Prepare pudding according to package directions; after pudding has come to a boil, add the 3/4 cup of coconut. Cool 5 minutes, stirring twice. Pour into cooled baked pie crust. Let cool for 3 hours. Add whipped cream or whipped topping over pie. Sprinkle the slightly-browned coconut on top.
