Baby Pears Poached In Red Wine Caramel

Ingredients

4 cups sugar
2 cups water
1 teaspoon lemon juice
12 cups red wine
48 seckel baby pears-peeled&cored
4 1/2 teaspoons balsamic vinegar
3 ounces molasses

Preparation

Caramelize the sugar, water and lemon juice

Add the red wine slowly to the caramel

Simmer pears in the wine for 20mins or til tender

Remove pears

Reduce the wine syrup to 6 cups

Add the vinegar and molasses

Cool the pears in the syrup
