St. Patrick's Day Salad
Ingredients
Salad
9 cups mixed greens
1 1/2 medium granny smith apple, unpeeled, diced small (use a small amount of lemon juice
5 tablespoons of fresh mint, minced (reserve 2 tablespoons for garnish)
1 1/2 cups of green grapes
3 large green bell peppers
1 Avocado (cubed)
5 ounces Irish cheddar cheese, cubed small
Dressing
3/4 cup whole milk buttermilk
4 1/2 tablespoons Raimondo Winery Red Apple Balsamic Vinegar
1 1/2 to taste salt, to taste
1 1/2 to taste black pepper, to taste
Preparation

Clean and cut salad ingredients above and place in a large salad bowl.

Wisk dressing ingredients. Pour over salad and toss.

Use the remaining 2 tablespoons to garnish the top of the salad.
