Wild Chanterelle Walnut Spread
Ingredients
2 cups Chopped Chanterelle Mushrooms
medium Finely Chopped Shallot
Butter
Fresh Thyme
Soft Goat Cheese
Preparation

Sauté Shallot, Garlic in butter till slightly softened and aromatic, add chopped Canterelles. Continue cooking until mushrooms are cooked. Season to taste with truffle salt or sea salt (or a combo of both) [note: truffle flavor can be very strong so be carefully not to overpower the lovely Chanterelle flavor] Add a bit of fresh minced thyme leaves. Mix with chopped Walnuts and Goat Cheese.

Serve with Croustini or your favorite Cracker.

About
Most of the joy in this recipe comes from forraging my own wild mushrooms. If I do not have many Chanterelles, I add in some store-bought Porcini mushrooms too.
