Garlicky Baked French Fried Potatoes

Ingredients

8 large yukon gold potatoes, Sliced into 1/2″ pieces
1 tablespoon olive oil
3 cloves garlic, finely shredded
1/2 teaspoon salt

Preparation

Slice potatoes and dry on paper towel to remove moisture.

Toss fries with olive oil and salt.

Spread on a cookie sheet sprayed with cooking spray.

Bake 20 – 30 minutes, turning to brown on all sides. Then 5 minutes before fries are tender, toss with shredded garlic. Bake another 5 minutes.

We live by a little restaurant in Snohomish that serves the most amazing garlic fries. Chef Chris at Mongo’s drowns his fries in shredded garlic, and serves them with an amazing jalepeno dip. I think I’ve died and gone to heaven!

As you can imagine, I don’t eat Chef’s fries as often as I’d like to, or my waistline would explode. Last night was burger night, so I decided to make a lighter version of Chef’s amazing garlic fries.

I must admit my fries were pretty darn good, and with considerably fewer calories and fat, I was a happy camper.
