Chicken With A Mushroom Sauce

Ingredients

1 1/2 cups assorted mushrooms, trimmed and diced
1 tablespoon butter
1 tablespoon of parsley and basil
1 teaspoon of pepper
1 teaspoon of salt
1/4 cup of olive oil

Preparation

In a pan add olive oil and heat. Once heated add your diced mushrooms

Until sautéed. As the mushrooms are on a low heat remove the skin off of the chicken thighs and add salt and pepper to each side.

In a new pan add your butter and olive oil. When it is heated proceed to add your chicken thighs. Turn only once 7 – 10 minutes. During this time you will want to start your mushroom sauce.

In a pot add your butter, whipping cream and bring to a boil. Once bubbling, reduce the heat to a simmer and add your other ingredients. Combine all ingredients for 5 – 8 minutes on a low heat.

Remove the chicken from the other pan and put it on a plate and spoon your mushroom sauce on top of your chicken.
