No-Bake Baked Alaska

Ingredients
1 Oreo pie crust
1/4 cup meringue powder
1/2 cup boiling water
2 tablespoons corn starch
3/4 cup sugar
Preparation

Press ice cream into pie crust and put in freezer while preparing the meringue. In a bowl, Dissolve sugar, corn starch and salt in boiling water and let cool for a few minutes. Add meringue powder and whip on high until peaks form. Spread meringue on top of ice cream and add peaks with the back of a spoon. Lastly, torch the entire top of the meringue until golden brown.

I decided to try to make a Baked Alaska without actually baking anything since (as usual) I was short on time and wanted to bring a homemade dessert over to our family get-together last night after work. I picked up the ingredients on the way home and it literally took about 10 minutes to prepare this dessert from start to finish.
Even though it's no-bake, you DO need to torch it. But what a nice excuss to buy yourself a blow torch! Luckily my hubby had one handy (of course...).
Everyone really enjoyed it and had fun watching the pie being torched (especially the kids!!)
