Thai Grilled Chicken Satay

The smell of these chicken skewers on the barbecue will have your mouth watering.  Chicken satay is usually served as an appetizer but it also can be the star.  This meal can be made in less than fifteen minutes.  While you are marinating the meat, make the peanut sauce and preheat the grill.  The skewers only take a few minutes to cook.  I would serve these with a marinated cucumber salad and brown rice.

Chicken Satay

Ingredients:

1 pound boneless skinless chicken breast halves

⅓ cup soy sauce

2 tablespoons fresh lime juice

2 cloves garlic, minced

1 teaspoon grated gingerroot

¾ teaspoon red pepper flakes

2 tablespoons water

¾ cup canned unsweetened coconut milk

1 tablespoon creamy peanut butter

4 green onions with tops, cut into 1-inch pieces
