Orange chicken has become America's favorite Chinese dish. Traditional orange chicken uses dried orange or tangerine, which is used both as a flavoring and a Chinese medicine. It is especially popular in the Hunan province of Western China. The Americanized version of orange chicken consists of battered and deep fried chicken pieces which are then stir fried in a glaze of orange juice or peel, chili, and sugar. I like to serve this dish with steamed broccoli and white rice.
