Tropical Carrot Cake

Ingredients
2 cups flour
2 cups sugar
1 cup egg beaters
1 cup unsweetened applesauce
1 teaspoon vanilla paste(or extract)
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon salt
3 cups carrots, shredded
1 small can crushed pineapple, undrained
1/2 cup coconut flakes

Preheat oven to 350 degrees.

Add the egg beaters and applesauce and vanilla. Mix well.

Cool completely.

About
This is an old favorite recipe that has been around for ages! The oil and eggs in the original recipe have been replaced with applesauce and egg beaters to create a low fat version.
Frost this cake with Lite Cream Cheese Frosting!
