Ropa Vieja

Ropa Vieja translates to "old clothes" in Spanish. This dish originated in the Canary Islands of Spain but through immigration arrived to Cuba, where it is now the national dish. The meat is cooked in a tomato based sauce for many hours until it falls apart. Ropa vieja is best served with white rice and black beans.

Ingredients:
2 pounds flank steak
3 med. onions
3 green peppers
7 cloves garlic
6 bay leaves
½ cup white vinegar
½ can tomato paste
2 ripe tomatoes
Salt and Pepper to taste
