Chicken & Cheddar Stuffed Potatoes

Ingredients
4 large white potatoes, parboiled
1 cup shredded cheddar cheese
2 chicken breast tenderloins, cooked and shredded
1/4 red onion, chopped
1 tablespoon fresh parsley, minced
1 tablespoon fresh basil, minced
1 teaspoon fresh thyme leaves
2 tablespoons milk
2 teaspoons unsalted butter
Paprika, optional
Kosher salt, to taste
Preparation

Rub potatoes with olive oil. Place on a baking sheet and cook in a preheated oven at 375 degrees for 30 minutes.

As potatoes bake, mix half of cheese with chicken, onion, parsley, basil and thyme. Set aside.

When potatoes are done, slice in half. Carefully scoop out potato flesh and put skins back on baking sheet. Add potato flesh to cheese mixture. Mash to break up pieces and combine ingredients.

Add butter and milk. Mash until fairly smooth. Divide evenly between potato skins. Top with remaining cheese.

Bake for another 5-7 minutes until cheese melts. Remove from oven and sprinkle with paprika, if desired. Salt to taste.

Susan, I am the shredded chicken goes in with the mix of the other items and cooked potato. Or you could leave the chicken out of the potato mix and finish the potato, and make a chicken sandwich with the chicken, to eat with your stuffed potato!!!

Whew!...I threw my chicken in with the potato,milk,butter.....
I'd crank down the Thyme....like to 1/2 to 1/4 tsp. That stuff is invasive.
The first part says to 'parboil'. The directions show to 'bake'. Threw a curve there. I served it with ketchup...needed a balance.
