Bobby Flay, celebrity chef and racehorse owner, was hired by The New York Times to comment on the excited energy surrounding the 2011 Kentucky Derby. Here's the intro to Flay's post about food, horses, and Americana: "While everyone who’s ever owned even 1 percent of a thoroughbred racehorse will admit to having Derby dreams of one day running in this country’s most famous race, I can honestly tell you that it is not a dream of mine. (Don’t get me wrong, if I ever was in a position to enter a colt which was good enough, sound enough and had enough graded-stakes earnings to qualify for the race, I certainly would line up to try and win the Kentucky Derby.)"
