Duck eggs are similar to other poultry eggs, they are typically larger than chicken eggs and smaller than goose eggs. In cooking, they can be used in recipies calling for chicken eggs. Due to their larger size, quantities may be adjusted.

Physical Description

The duck egg shell can be firmer than the chicken egg shell. The white of the egg contains more protein and will be more viscous and will take more effort to break down if beating the whites into an egg foam. The duck egg yolk has more fat than a chicken egg. Frech duck egg whites and yolks stand tall in a pan when cooked.

Colors: Shell colors: white, grey, off white. Yolk: dark yellow ranging to orange
