Offal is the innards of a butchered animal, including heart, liver, lungs, stomach, pancreas, brains and intestines.

Offal is eaten in many cultures, though some shy away from it; some regions consider certain types of offal to be delicacies while in other places they may be considered by-products. Medudo, haggis and sweetbreads are common dishes made from offal.
