Sesbania flower is eaten as a vegetable. When the Sesbania tree starts to bloom, it blooms like a tree full of butterflies.

The Sesbania flower is harvested before it is fully open. When cooking this vegetable just remove the stem, open the petals, and remove the stamen and pistil of each flower. It has a bittersweet taste and is usually made into a salad.
