Shirred eggs is where an egg is broken into a small buttered ramekin, then quickly cooked under the broiler. Like a poached egg, the result is a liquid yolk and whites that are softly set, yet tender.

Physical Description

A Shirred Egg is cooked slowly on top of the stove...in a ramekin, Le Creuset works best. but hard to find in the US. Melt a bit of butter then add egg...with a bit of milk or cream with dill, ground pepper. Salt to taste. Cook just enough to set the white..yolk should be almost runny.
