Sprouted Coconut

an incredibly tasty treat, the sprouted coconut is just that. A mature coconut falls to the ground and begins to form sprouts that will one day turn into a tree if left to grow. A sprouted coconut can be picked when the 'shoot' is no more than a foot and a half tall. It should be easy to pick out of the ground. It is not easy to open, you must use a machete or other tool to husk the nut, then carefully open to reveal the yummy sprouted meat inside.
Sprouted coconut meat is spongey and tastes like angel food cake, only it is coconut and magnificently rich in nutrients. Each sprouted coconut has a unique flavor and texture depending on where it has grown.
Use sprouted coconut in simple desserts, with a sweet sauce, or simply on its own.

Probably about the size of softball used to play baseball - it's weight is about the same as a dry sponge of the same size and its color resembles creamy fresh milk or whipping cream..
