Rennet

About
Rennet is a complex of enzymes added to cheese to separate the curds from the whey. The active enzyme is rennin (chymosin), though there are other inactive enzymes as well. Rennet is found in the lining of mammalian stomachs, therefore cheeses made with rennet are not suitable for vegetarian consumption.
