Teczcape - An Escape to Food
So I resort to parchment-steamed veggies. Parchment so that I can retain as much moisture as possible; and parchment so that I don't have to even wash any dishes. Ha, laziness to the max. but to my advantage!

Lardon My French
Pinakbet is a dish that originates from my mom's hometown in Ilocos Norte. It's a melange of vegetables; tomatoes, onions, bitter melon, okra, green beans, all cooked with garlic, ginger, and bagoong (shrimp paste) until shriveled. It's one of my mom's staple recipes... a dish that she either cooks, or brings home from the Filipino store.

Mommie Cooks!
When I say the words “Bananas Foster French Toast”, what thought comes to your mind? For me it’s one all encompassing word. Scrumptious.

Bunkycooks
There is nothing much simpler than roasting veggies. The caramelization brings out the sweetness in the carrots and the subtle hint of Meyer Lemons adds a really delightful flavor. I have made them several times and just had to share this recipe!

Cherry on a Cake
They were bananas after all. No? The only difference being that you cook them rather than eat them raw. But they are bananas just as cooking apples are apples....yes? I rest my case.

Irish Potatoes, a creamy coconut candy coated in cinnamon to make them resemble potatoes. I had never heard of them before, but I fell in love with them immediately.

Butternut squash pureed into macaroni and cheese just sounds like a match made in heaven, doesn’t it? It is also a fun way to sneak in another veggie.
